Suggested by Philippe Labat,
for 4 people.
● 100 grams / 3.5 ounces fresh goat cheese
● 2 tablespoons fresh cream
● 2 tablespoons honey
● 1 teaspoon finely chopped fresh sage
● 1 teaspoon olive oil
● ½ teaspoon white pepper
● ½ teaspoon salt
● 4 large slices of bread with raisins
Preparation
1. In a bowl, mash the goat cheese and add the cream. Then gradually add the olive oil, honey, salt, pepper, and finally the sage. Leave the mixture to macerate for an hour or two in the refrigerator to help the flavors of sage to diffuse more thoroughly.
2. Cut the bread into small chunks and add the goat cheese spread to serve immediately.
