
Suggested by the Baly family, for 8 people.
Yields approximately 2 1/2 cups
● 3/4 cup Sauternes
● 1/4 cup honey
● 2 tablespoons orange zest
● 1 pound fresh cranberries, approximately
● 4 cups¼ teaspoon salt
Preparation
1. Wash the cranberries and discard any soft or wrinkled ones.
2. Bring Sauternes, honey, zest and salt to a simmer.
3. Add the cranberries and cook until about 2/3 of the berries have popped (about five minutes).
4. Remove from the heat and allow to cool.
5. Refrigerate until you are ready to serve.
