{"id":3511,"date":"2014-11-25T10:59:26","date_gmt":"2014-11-25T09:59:26","guid":{"rendered":"https:\/\/www.chateaucoutet.com\/?p=3511"},"modified":"2018-11-22T11:49:45","modified_gmt":"2018-11-22T10:49:45","slug":"roasted-cod-with-puy-lentils-and-tomato-and-basil-vinaigrette","status":"publish","type":"post","link":"https:\/\/www.chateaucoutet.com\/en\/2014\/11\/roasted-cod-with-puy-lentils-and-tomato-and-basil-vinaigrette\/","title":{"rendered":"Roasted cod with Puy lentils and tomato and basil vinaigrette"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>For the cod and lentils:<\/strong><\/p>\n<p>4 tbsp. extra virgin olive oil<\/p>\n<p>2 shallots, finely diced<\/p>\n<p>2 cloves of garlic, finely diced<\/p>\n<p>50g pancetta or streaky bacon, cubed<\/p>\n<p>200g puy lentils<\/p>\n<p>300ml chicken stock<\/p>\n<p>2 bay leaves<\/p>\n<p>A large sprig of thyme<\/p>\n<p>6 sunblush tomatoes, finely diced<\/p>\n<p>4 cod fillets<\/p>\n<p>Sea salt and black pepper<\/p>\n<p>&nbsp;<\/p>\n<p><strong>For the vinaigrette:<\/strong><\/p>\n<p>3 tbsp. red wine vinegar<\/p>\n<p>6 tbsp. extra virgin olive oil<\/p>\n<p>8 sunblush tomatoes<\/p>\n<p>2 spring onions<\/p>\n<p>8 large leaves of fresh basil<\/p>\n<p>Sea salt and black pepper<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<p>1. In a large saucepan fry the shallots and garlic in oil over a low heat, until softened.<\/p>\n<p>&nbsp;<\/p>\n<p>2. Add the pancetta and cook for a further 3-4 minutes, stirring regularly.<\/p>\n<p>&nbsp;<\/p>\n<p>3. Add the lentils, stock, bay, thyme, and sunblush tomatoes, and bring to a simmer.<\/p>\n<p>&nbsp;<\/p>\n<p>4. Cover with a lid and cook gently for about 25 minutes, until the lentils are tender.<\/p>\n<p>&nbsp;<\/p>\n<p>5. Preheat the oven to 200\u00b0C. Keep checking the lentils and add water if they become too dry.<\/p>\n<p>&nbsp;<\/p>\n<p>6. Meanwhile, for the vinaigrette, blend together all the ingredients in a food processor.<\/p>\n<p>&nbsp;<\/p>\n<p>7. Season the vinaigrette and lentils to taste. Remove the herbs from the lentils.<\/p>\n<p>&nbsp;<\/p>\n<p>8. Lay out the cod fillets on a foil-lined baking tray. Season well and drizzle with oil.<\/p>\n<p>&nbsp;<\/p>\n<p>9. Bake in the preheated oven for 14-18 minutes, until flaky and just cooked through.<\/p>\n<p>&nbsp;<\/p>\n<p>10.
