The citrus fruits add a touch of sweetness and tanginess to this dish \u2013an excellent pairing with Ch\u00e2teau Coutet.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients:\u00a0<\/strong><\/p>\n<p>12 good-sized Saint-Jacques scallops<br \/>\nSalt and freshly-milled pepper<br \/>\n300g fresh chanterelle mushrooms<br \/>\n1 shallot<br \/>\nA few flat-leaf parsley leaves<br \/>\nA splash of olive oil<\/p>\n<p>&nbsp;<\/p>\n<p><strong>For the citrus fruit juice:\u00a0<\/strong><br \/>\n1 grapefruit<br \/>\n1 orange<br \/>\n1 clementine<br \/>\n1 small piece of fresh ginger<br \/>\nA splash of olive oil<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><br \/>\nCut a few zests from the citrus fruits.<\/p>\n<p>Squeeze the orange, grapefruit and clementine.<\/p>\n<p>Add the grated ginger to the juice and reduce by \u00be.<\/p>\n<p>Stir a little olive oil into the juice and lightly season.<\/p>\n<p>Clean the chanterelle mushrooms and saut\u00e9 them in a dash of olive oil on high heat.<\/p>\n<p>Season the chanterelle mushrooms when cooked through and then add the very finely chopped shallot and parsley.<\/p>\n<p>Put the chanterelle mushrooms aside.<\/p>\n<p>Lightly salt the Saint-Jacques scallops and cook them 1 minute on each side over very high heat.<\/p>\n<p>Pepper the scallops when they are cooked<\/p>\n<p>Arrange the Saint-Jacques scallops and the chanterelle mushrooms attractively on plates.<\/p>\n<p>Pour a little of the reduced juice onto each plate and decorate with the flat-leaf parsley<\/p>\n<p>It\u2019s now ready to enjoy!<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Suggestion:<\/strong><\/p>\n<p>The Saint-Jacques scallops should be cooked very quickly to avoid them being rubbery.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Serves 4 &nbsp; Preparation time: 25 minutes Cooking time: 10 minutes &nbsp; This is a very elegant starter combining ingredients from the sea and land.
