{"id":3719,"date":"2016-02-25T12:24:55","date_gmt":"2016-02-25T11:24:55","guid":{"rendered":"https:\/\/www.chateaucoutet.com\/?p=3719"},"modified":"2018-10-25T12:26:33","modified_gmt":"2018-10-25T10:26:33","slug":"feta-and-herb-couscous-stuffed-peppers-with-rocket-and-sundried-tomatoes","status":"publish","type":"post","link":"https:\/\/www.chateaucoutet.com\/en\/2016\/02\/feta-and-herb-couscous-stuffed-peppers-with-rocket-and-sundried-tomatoes\/","title":{"rendered":"Feta and herb couscous stuffed peppers with rocket and sundried tomatoes"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>For the stuffed peppers:<\/strong><\/p>\n<p>1 red pepper<\/p>\n<p>1 yellow or orange pepper<\/p>\n<p>6 tbsp. extra virgin olive oil<\/p>\n<p>100g couscous<\/p>\n<p>40g pine nuts, toasted<\/p>\n<p>120g feta cheese, chopped into 1 cm cubes<\/p>\n<p>A handful of chopped mint, parsley and dill (or other herbs of your choice)<\/p>\n<p>2 spring onions, finely chopped<\/p>\n<p>1 lemon, juice and finely grated zest<\/p>\n<p>Sea salt and black pepper<\/p>\n<p>&nbsp;<\/p>\n<p><strong>For the salad:<\/strong><\/p>\n<p>150g rocket leaves<\/p>\n<p>50g sundried tomatoes in extra virgin olive oil<\/p>\n<p>2 tbsp. balsamic vinegar<\/p>\n<p>A handful of parmesan shavings<\/p>\n<p>Sea salt and black pepper<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<p>1. Preheat the oven to 200\u00b0C.<\/p>\n<p>&nbsp;<\/p>\n<p>2. Cut the peppers in half lengthways and remove the seeds and core with a sharp knife.<\/p>\n<p>&nbsp;<\/p>\n<p>3. Place them in a baking tray and drizzle with a little oil. Season to taste. Cook in the preheated oven for about 20 minutes, or until tender.<\/p>\n<p>&nbsp;<\/p>\n<p>4. Meanwhile, in a saucepan heat 300ml water with the oil and a generous pinch of salt. Once simmering, add the couscous and cook for 3-4 minutes, stirring frequently. Remove from the heat and put a lid on for 5 minutes. Stir in the pine nuts, feta, herbs, spring onions, oil, lemon juice, and zest. Season to taste.<\/p>\n<p>&nbsp;<\/p>\n<p>5. Stuff the cooked peppers with the mixture and set aside.<\/p>\n<p>&nbsp;<\/p>\n<p>6. For the salad, toss together the rocket, sundried tomatoes, and a few tablespoons of their olive oil. Season to taste. Add the balsamic vinegar and parmesan shavings. Season to taste.<\/p>\n<p>&nbsp;<\/p>\n<p>7.
