{"id":3746,"date":"2015-05-25T14:20:56","date_gmt":"2015-05-25T12:20:56","guid":{"rendered":"https:\/\/www.chateaucoutet.com\/?p=3746"},"modified":"2018-11-22T12:05:20","modified_gmt":"2018-11-22T11:05:20","slug":"pumpkin-creme-brulee","status":"publish","type":"post","link":"https:\/\/www.chateaucoutet.com\/en\/2015\/05\/pumpkin-creme-brulee\/","title":{"rendered":"Pumpkin Cr\u00e8me Brul\u00e9e"},"content":{"rendered":"<p>Serves 8<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 (15-ounce) can pumpkin pur\u00e9e (or fresh, homemade pumpkin pur\u00e9e)<\/p>\n<p>\u00be cup sugar<\/p>\n<p>5 large egg yolks<\/p>\n<p>1 \u00bd teaspoons vanilla extract<\/p>\n<p>\u00be teaspoon cinnamon<\/p>\n<p>\u00bc teaspoon ground cloves<\/p>\n<p>\u00bc teaspoon ground cardamom<\/p>\n<p>\u00bc teaspoon ground allspice<\/p>\n<p>\u00bc teaspoon salt<\/p>\n<p>3 cups whipping cream<\/p>\n<p>\u00bd cup brown sugar, sifted<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<p>1. Preheat oven to 325\u00b0 F (163\u00b0 C).\u00a0Position a rack in the center of the oven.\u00a0Place 8 (6-ounce) shallow ramekins in 2 large baking pans and have a large pot of boiling water ready.<\/p>\n<p>&nbsp;<\/p>\n<p>2. In a large bowl, whisk together the pumpkin pur\u00e9e and sugar. Whisk in the egg yolks and vanilla extract, then the spices and the salt.<\/p>\n<p>&nbsp;<\/p>\n<p>3. Heat the cream in a medium saucepan over medium high heat until it comes to a boil. Remove from the heat and slowly whisk cream into the pumpkin mixture until smooth. Divide among the 8 ramekins.<\/p>\n<p>&nbsp;<\/p>\n<p>4. Place the baking pans in the oven, then carefully add enough boiling water to come halfway up the sides of the ramekins. (For ease, consider adding water to the baking pans before transferring them to the oven.)<\/p>\n<p>&nbsp;<\/p>\n<p>5. Bake for 30 \u2013 35 minutes, or until the center of the custards are slightly set. Remove from the oven to cooling racks. Cool for 30 minutes, then refrigerate until cold (at least 6 hours or overnight).<\/p>\n<p>&nbsp;<\/p>\n<p>6. Prior to serving, sprinkle 1 tablespoon of the brown sugar evenly over the top of each cr\u00e8me brul\u00e9e. Place under a broiler until the sugar has caramelized to a rich golden brown, then refrigerate until the sugar hardens (20 &#8211; 60 minutes).
