{"id":5113,"date":"2018-10-05T15:52:25","date_gmt":"2018-10-05T13:52:25","guid":{"rendered":"https:\/\/www.chateaucoutet.com\/?p=5113"},"modified":"2018-11-05T15:55:49","modified_gmt":"2018-11-05T14:55:49","slug":"creamed-parsnip-and-beetroot-with-roasted-lemon-and-oregano","status":"publish","type":"post","link":"https:\/\/www.chateaucoutet.com\/en\/2018\/10\/creamed-parsnip-and-beetroot-with-roasted-lemon-and-oregano\/","title":{"rendered":"Creamed parsnip and beetroot with roasted lemon and oregano"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<p>100ml olive oil<\/p>\n<p>2 large, raw beetroot, peeled and roughly sliced<\/p>\n<p>4 medium parsnips, peeled and chopped into quarters lengthways<\/p>\n<p>2 large unwaxed Sicilian lemons, zested then roughly sliced<\/p>\n<p>A handful of fresh oregano, roughly chopped<\/p>\n<p>A thumb-sized piece of fresh root ginger, grated<\/p>\n<p>1\/2 tsp. hot red chili powder<\/p>\n<p>200ml chicken stock<\/p>\n<p>50g butter<\/p>\n<p>300ml whole milk<\/p>\n<p>Sea salt and black pepper<\/p>\n<p>Roasted vegetable crisps to decorate<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>1. Preheat the oven to 200\u02daC.<\/p>\n<p>&nbsp;<\/p>\n<p>2. In a large oven tray, mix together the slices of beetroot, parsnip, lemon and lemon zest with the olive oil, oregano, ginger and chili powder.<\/p>\n<p>&nbsp;<\/p>\n<p>3. Season generously with sea salt and black pepper then roast for 25-30 minutes, until soft and lightly golden.<\/p>\n<p>&nbsp;<\/p>\n<p>4. Allow to cool then squeeze the lemon pulp and juice into a blender, discarding the remaining peels.<\/p>\n<p>&nbsp;<\/p>\n<p>5. Pour in the contents of the roasting tray and blend together with the chicken stock and butter.<\/p>\n<p>&nbsp;<\/p>\n<p>6. Add milk little by little, if necessary, to thin the mixture and give it a creamy texture. Season to taste.<\/p>\n<p>&nbsp;<\/p>\n<p>7.
